Ingredients
1 cup flour
¼ cup castor sugar
Pinch of salt
¼ tsp baking powder
2 eggs
1 cup coconut milk
1½ cups fresh or frozen berries
2 tbsp honey
1 tsp lemon juice
½ tsp vanilla extract
½ cup cream, whipped
10 mint leaves, finely chopped
Method
- Make the crepe batter:
In a bowl, whisk together the flour, sugar, salt, and baking powder. In a separate bowl, beat the eggs and coconut milk. Gradually add the wet ingredients to the dry ingredients, whisking until smooth. Let the batter rest for 10 minutes. - Prepare the compote:
In a saucepan over medium heat, combine the berries, honey, lemon juice, and vanilla. Cook for 5–7 minutes, stirring occasionally, until the berries break down and the mixture thickens. Let cool slightly. - Cook the crepes:
Heat a non-stick pan over medium heat and lightly grease it. Pour a small ladleful of batter into the pan, swirling to coat the surface evenly. Cook for about 1–2 minutes until the edges lift slightly, then flip and cook for another 30 seconds. Repeat with the remaining batter. - Assemble the crepes:
