Simple and tasty recipes from Keto Lifestyle: Simple by Hendrik Marais

Ingredients
120g zucchini (baby marrows)
Salt and pepper, to taste
1 Tbsp (15ml) pumpkin seeds
1 (140g) chicken breast
1 Tbsp (15ml) butter
1 Tbsp (15ml) olive oil
80g halloumi, cubed
¼ cup (60ml) zesty chimichurri
A small handful of fresh basil, chopped
ZESTY CHIMICHURRI
Grated zest and juice of ½ lemon
½ medium yellow pepper, finely diced
1 chilli, finely diced and seeds removed
1 clove garlic, minced
2 Tbsp (30ml) chopped fresh parsley
6 Tbsp (90ml) olive oil
Salt and pepper, to taste
1. Place the lemon zest and juice into a small bowl
2. Mix in the yellow pepper, chilli, garlic, parsley and olive oil. Season to your liking.
Method
1. To make the zoodles (zucchini noodles), use a spiraliser to cut the zucchini into thin noodles. This is a lot easier if the zucchinis are large. If you don’t have a spiraliser, use a potato peeler to create shavings and then slice into thinner noodles with a sharp knife. Place the noodles in a colander, sprinkle with salt, and let them rest for 15 minutes.
2. Heat a frying pan over medium heat and toast the pumpkin seeds for a few minutes until fragrant. Watch carefully as they can burn quickly.
3. Season the chicken breast with salt and pepper. Heat the butter in a pan and pan-fry the chicken for 10 minutes on each side or until cooked. Leave to rest for 5 minutes and then slice.
4. Heat the olive oil in the same pan and fry the halloumi until it turns golden brown on each side.
5. Boil the zucchini noodles in salted water for 60 seconds, then drain. Transfer the noodles to a bowl
and toss with the chimichurri.
6. Serve the noodles with the sliced chicken and halloumi cubes. Top with toasted pumpkin seeds
and chopped basil, or any other garnish you prefer.
NOTE: To make this a true time-saving dish, prepare the zucchini noodles and chimichurri ahead of time.
